INGREDIENTS

50ml Spiced Rum (Remove for non-alchoholic version)
25ml Lime Juice
25ml Mathieu Teisseire Ginger Syrup
50ml Pear Puree
75ml Apple Juice

Garnish

Pear fan, dusted with cinnamon (flamed for extra theatre).

Method

  1. Half fill a tall glass with crushed ice, add the ingredients and mix through with a bar spoon.
  2. Cap with more crushed ice to fill the glass, garnish with a pear fan.
  3. Dust with cinnamon and serve.
