FLAVOUR ORIGINS

According to Greek legend, raspberries were originally white. Ida, the nurse of an infant Zeus, wanted to soothe his crying so pricked her finger with the raspberry thorns and the fruit turned a blood-red colour. In reality, Raspberries are a member of the Rose family, and like Roses come in a variety of colours including purple, black and yellow. Raspberries need ample sun and water, and as such are traditionally plentiful in midsummer. They're grown for the fresh fruit market and for processing into purees and juices, or to make a variety of mouth-watering desserts such as cheesecake, ice cream and sorbet. For a true taste of summer and days out, count on Mathieu Teisseire Raspberry purée. It's floral flavours give way to the intense taste of raspberries and it's texture is silky, soft and smooth just like the fruit itself.
