INGREDIENTS

10ml Mathieu Teisseire Lime Syrup
20ml Mathieu Teisseire Hazelnut Syrup
40ml espresso coffee
100ml Britvic indian tonic
50ml Aqufaba, egg white or vegan foamer

Method

  1. Add the tonic and syrups to an Irish coffe glass full with ice and stir gently to mix.
  2. Gently pour the espresso over the back of a bar spoon to create a distinct layer above the tonic.
  3. Add the Hazelnut syrup and foaming agent to a cocktail shaker and shake hard with one ice cube (or the spring from a strainer) to create a foam. Alternatively, add the foaming agent and hazelnut syrup to a shaker and blend with a stick blender to create the foam.
  4. Spoon the foam from the shaker and layer it carefully over the surface of the drink to finish, and serve.
