The lemon is a species of small evergreen trees which bears the yellow citrus fruit of the same name. Native to Asia, the first substantial cultivation of lemons in Europe began in Genoa in the 15th century, then was introduced to the New World shortly after.
The lemon fruit has been used for culinary and non-culinary purposes for centuries, primarily for its juice which has a strong, bitter yet sweet aroma and taste. Lemon juice, as well as its rind and peel, are used in a wide variety of foods and drinks and the whole lemon is used to make marmalade, lemon curd and lemon liqueur.
