By the Middle Ages, bitters became more concentrated and were prepared with distilled alcohol, which modern bitters can trace their heritage. Italian bitters, invented in 1860 by Gaspare Campari, in Novara Italy, gave birth to a new era of ‘red passion’ and Italian Bitters.
The addition of this ingredient led to the cocktails we know today, the Americano and the Negroni.
