Rosemary is a shrub with fragrant, needle like leaves and purple, blue and white flowers. It is native to the Mediterranean region, which probably accounts for its name in classical Latin, ros marinus, meaning “Sea-dew”. Since that time, Rosemary has played a significant role in many cultures, either as a folk medicine or a symbol of remembrance. Rosemary leaves have a bitter, astringent taste and distinctive aroma that is used as a flavouring for a variety of foods. When roasted with meats or vegetables, the leaves infuse a mustard-like aroma with notes of charred wood that goes especially well with barbecued foods. Mathieu Teisseire Rosemary Syrup perfectly recreates the intense aromatics of this beautiful Mediterranean herb.
