The diverse food scenes, drinking habits and cocktail cultures of Paris, Dubai, Singapore and London have all been artfully considered and combined to deliver a drink that’s truly unique and wonderfully memorable.
‘Voyage’ brings together the spices of the local souk markets of Dubai, the citrusy flavours of Singapore and herbal Suze and warming Cognac native to France. All of which have been further elevated by the distinctively tart and floral Mathieu Teisseire Hibiscus syrup.
Parisian born and raised, Nico has made a lasting impression on the cocktail community around the world. He first began bartending in Paris in 2005 where he was trained in the art of classic cocktails and has since gone on to win a multitude of awards and accolades.
Nico has a passion for travelling and has visited 103 destinations and worked in 43 of them. This is reflected in Nico’s approach to drinks creation which is inspired by the countries and cuisines he’s experienced.
Named Diageo World Class HK & Macau Bartender of the Year 2019, Shelley is one of the brightest female bartenders in the industry. A Hong Kong native, Shelley started her bartending career at 20, learning the ropes of mixology at some of the most reputable clubs and restaurants in the country.
Fuelled by her innate curiosity and desire to expand her craft, Shelley moved to Singapore in December 2020 to helm Nutmeg & Clove and Chuan by Nutmeg. Shelley works to shake things up at the bars and loves to ideate new concepts, inspired by the variety of fresh produce and ingredients in Singapore, especially herbs and spices.
Danilo Pozone is an internationally renowned bartender. Native to Italy, Danilo’s career began in humble fashion 18 years ago in a small cocktail bar in the heart of Naples. From there, Danilo has travelled the globe, progressing his career in 5* hotels, hotel bars, cocktail bars, World 50 Best Bars and members clubs.
Now established in Dubai, Danilo is a Brand Ambassador for Asahi and Global Bartending, having previously been the General Manager of Galaxy Bar and Operations Manager of Me Dubai.
