Foamy Espresso Tonic

Ingredients

  • 10ml Mathieu Teisseire Lime Syrup
  • 20ml Mathieu Teisseire Hazelnut Syrup
  • 40ml espresso coffee
  • 100ml Britvic indian tonic
  • 50ml Aqufaba, egg white or vegan foamer

Method

  1. 1 Add the tonic and syrups to an Irish coffe glass full with ice and stir gently to mix.
  2. 2 Gently pour the espresso over the back of a bar spoon to create a distinct layer above the tonic.
  3. 3 Add the Hazelnut syrup and foaming agent to a cocktail shaker and shake hard with one ice cube (or the spring from a strainer) to create a foam. Alternatively, add the foaming agent and hazelnut syrup to a shaker and blend with a stick blender to create the foam.
  4. 4 Spoon the foam from the shaker and layer it carefully over the surface of the drink to finish, and serve.
