Spiced Pear

• 50ml Spiced Rum (Remove for non-alchoholic version)
• 25ml Lime Juice
• 25ml Mathieu Teisseire Ginger Syrup
• 50ml Pear Puree
• 75ml Apple Juice

Pear fan, dusted with cinnamon (flamed for extra theatre).

Highball

1. 1 Half fill a tall glass with crushed ice, add the ingredients and mix through with a bar spoon.
2. 2 Cap with more crushed ice to fill the glass, garnish with a pear fan.
3. 3 Dust with cinnamon and serve.
